For a couple of years now I have wanted to start a blog but somehow blogging always seemed like an intimidating endeavour. It wasn’t until recently when re-read The Great Gatsby that I told myself: If not now, when? And here I am, writing my first post.
Of course, my first post has to be about the most perfect and delicious latkes recipe I know. I followed Ina Garten’s instructions but made these crispy potato fritters gluten-free.
Ingredients:
What you will need to make these mouth-watering latkes:
- 5 small potatoes
- 1 large egg
- 3 tablespoons of flour (I used gluten-free flour)
- salt, peper and nutmeg to taste
- some oil for frying
Instructions:
Mix together finely and coarsely grated potatoes with the rest of the ingredients. Heat the oil in a frying pan and add a tablespoon of the mixture to the pan. Cook them until crisp and golden brown on the outside. It will take about 2 minutes on each side. Remove the fritters from the pan and place them on a kitchen towel to soak up the oil. Et voilà, garnish your latkes with crème fraîche, dill, chives, smoked salmon, caviar or whatever you prefer and tuck in.
