This coconut cake has been a staple in our home. It’s been prepared numerous times for Sunday dessert, afternoon tea, birthdays, or to brighten up a dull day and every single time it hit the spot. As said, this cake is an impressive dessert yet so simple to make. Additionally, it’s super moist and tastes just like a low-carb and gluten-free version of “Weisser Traum” (That’s like winning the jackpot – every Austrian will agree!).

Ingredients

130g butter, softened at room temperature
80g erythritol powder 
45g coconut flour 
40g shredded coconut 
110ml coconut milk
3 large eggs
1 tsp salt
2 tsp vanilla extract
3/4 vanilla bean
10g baking powder

For the Filling and Frosting

130g butter, softened at room temperature
200g cream cheese 
30g cream curd cheese 
80g erythritol  
1/4 vanilla bean


Method

  1. First, heat oven to 160C, grease two round 18cm baking dishes and sift together the flour, salt and baking powder.
  2. Beat the “sugar” and butter until light and fluffy, then beat in the vanilla extract and, then the eggs, one at a time.
  3. Add the coconut flour, baking powder and salt to the mixture.
  4. Finally, add the shredded coconut and coconut milk and beat well for about 5 more minutes.
  5. Divide the batter into 2 equal portions and scoop them into the prepared baking dishes
  6. Bake for about 37 mins.

This recipe can be easily altered. It tastes just as fantastic with lemon zest or coconut extract in the batter and filling. Also, strawberry slices to fill the cake are delicious for warmer spring or summer days.

And, the best part, the ingredients can be easily doubled in order to have 4 scrumptious layers, which will transform this bake into a reals showstopper cake.
