What to do when summer showers you with an abundance of fresh produce? Well, you make a galette. A blackberry thyme galette in particular, one that is not only gluten-free, but also low-carb and keto-friendly.
Blackberry Thyme Galette

Servings: 2-4
For the dough:
- 60g almond flour
- 50g butter at room temperature
- 50g shredded coconut
- 20g sweetener (e.g. erythritol)
- 1 egg
For the filling:
- 200g blackberries
- lemon juice to taste
- sweetener to taste
- 3 twigs of thyme
And here’s how you make this delicious blackberry thyme galette:
- In a food processor, mix the shredded coconut, butter, almond flour, erythritol and egg together and then tip onto a baking tray. Use a rolling pin to roll the dough into a round shape.
- Prepare your fruit filling by adding 150g of the blackberries, the lemon juice and the twigs of thyme to a small pot and then heat slowly over medium heat until the mixture starts to boil. Reduce heat to low and cook on low heat until the blackberry stew starts to thicken. Then remove the thyme twigs and add sweetener to taste. Let it cool a bit before blending until smooth.
- Assemble the galette by pouring the fruit stew onto the dough. Leave a small border around the edge. Finally, fold the edges of the dough up and gently crimp them. Then, sprinkle the remaining blackberries onto the galette.
- Bake for about 15 minutes until golden brown at 160° fan and let it cool down for a bit before serving it.
Once out of the oven, grate fresh lemon zest over the galette.
Pair a slice of this galette with a dollop of mascarpone cheese or a scoop of vanilla ice cream and you’ll have a lovely teatime treat.
We served it with a dollop of mascarpone cheese and some more fresh thyme. It’s utterly delicious.
The flavours of coconut, blackberries, thyme and lemon zest go together wonderfully. Also, can you imagine devouring this galette when still a bit warm with a big scoop of ice cream? Ahhh, fantastic!
