Easy Summer Lunch: Grilled Eggplant with Tomato Sauce, Basil and Feta Cheese

We’ve been harvesting copious amounts of organic fruit and vegetables this summer and having fresh produce at my fingertips makes it super easy to come up with delicious, healthy and easy lunch recipes. This previous week I made grilled eggplant with tomato sauce, basil and Feta twice and it’s a delightfully simple as well as light dish that is incredibly tasty due to grilled vegetables.

Grilled Eggplant with Tomato Sauce, Basil and Feta Cheese

Ingredients

  • 1 eggplant
  • a handful of tomatoes
  • basil leaves
  • 150g Feta Cheese
  • 1 tbsp olive oil
  • salt and pepper to taste
  • chili flakes to taste

Instructions

  1. Start by prepping the veg and preheating the oven to 200 degrees (grill function).
  2. Cut the eggplant into round slices, brush them with olive oil and grill for about 10 minutes.
  3. In the meantime heat 1 tbsp olive oil in a pan. Once warm, throw in diced tomatoes and let them cook for about 7 minutes. Add salt, pepper and chili flakes to taste. When done use an immersion blender and blend until you have a smooth tomato sauce.
  4. Cut basil leaves into ribbons.
  5. Arrange the grilled eggplant slices on a plate, spoon over some tomato sauce and sprinkle the dish with Feta and basil ribbons.

    Not only does it look great, it makes me want to try them and I’ll have you know that my stomach doesn’t handle eggplant well. Especially if its fried so I guess this recipe is worth trying out. 😉
