Delicious Elderflower Pancakes

The warmer spring weather and birds chirping have me in the mood for great desserts and lots of outdoor fun and while hiking last week I realized that elderflower season is finally upon us. So, of course, I had to make a traditional Austrian dish that brings back so many fond memories of my childhood: elderflower pancakes.

These elderflower pancakes, or “Holunderstrauben” as we call them here, are just one of the best things that spring has to offer and if you have an elderflower tree (or know where you can find one) you have to try these.

Ingredients:

Here’s what need to make these scrumptious elderflower pancakes:

  • about 10 elderflower umbels (in full bloom)
  • 300ml milk
  • 150gr flour
  • 2 eggs

  • sweetener to taste
  • lemon zest
  • oil for frying

Instructions:

And here’s how you make them:

  1. After picking elderflower umbels, start by preparing the batter for the pancakes. Mix together the milk, flour, eggs, sweetener and lemon zest until the batter is smooth. If your batter is too runny, add some more flour.
  2. Depending on the size of your pan, heat about 700-900 ml of oil.
  3. Now take one of the flower heads, hold it by its stem and dip it into the batter.
  4. Take it out of the pancake mixture, let it drain for a bit and then put the batter covered umbel into the hot frying oil.
  5. Still holding the umbel by its stem, carefully wiggle it immediately when added to the hot oil. This will make sure that the flower head unfolds again instead of being a clump of batter. But be careful not to burn yourself!
  6. Fry the pancake until golden brown and then place it on kitchen paper to remove any excess oil.
  7. Repeat steps 3-6 until you’re done.
  8. Finally, dust the fried elderflower umbels with confectioners’ sugar before serving them.

We love to enjoy this scrumptious dish as dessert with a good cup of coffee but, let me tell you, they taste just as great when you make them for breakfast or lunch.

Furthermore, sprinkling the still warm elderflower pancakes with some more grated lemon zest, will only add to the wonderful flavour.

    Wow! What a creative recipe idea. I very much appreciate it when people, like you, come up with these intricate and different recipes that take a twist on the classic ones we have. This variation of the classic pancakes not only look beautiful, but I’m sure are a much lighter option too!

    These look absolutely scrumptious! Wish I could try these out but we do not have elderflower here. What sort of taste do they have?

      Thank you, D! Have you tried elderflower cordial or syrup? I’d say it’s a very summery and floral taste. Very subtle and warm… almost like honey. But it’s really difficult to describe.
