Low Carb Tortillas for Cinco de Mayo
I know, I know, it’s only the first of May but we made these wonderfully delicious low carb tortillas for an early Cinco de Mayo celebration (read: rehearsal fiesta). We’ll be inviting friends and, thus, had to practice making tortillas we then could wash down with margaritas and cerveza. And holy guacamole, these gluten-fee tortillas turned out so well!
Low-carb Tortillas

Servings: 2
To make 6 low carb tortillas you’ll need:
240ml lukewarm water
50g coconut flour
10g psyllium husk
5g baking powder
salt to taste
Cajun seasoning (we use “Spicy Cajun” by Sal de Ibiza)
First and foremost, yes, these tortillas have a mild coconut taste but, in my opinion, this really enhances the pleasant flavour of this dish. To make them you have have to combine all dry ingredients. Then slowly add the liquid while you start kneading to make the dough. Let your dough rest for a bit. In the meantime you can get your tortilla press ready and cut out parchment paper circles (you will want to press the individual tortillas between two sheets of parchment paper). Heat a pan and then divide the dough into about 6 equal portions depending on the size of your tortilla press and your preferred thickness. Our tortilla press is rather small (it makes 6-inch tortillas) and thus this recipe yields 6 Mexican flat breads. Finally, bake the tortillas on each side until lightly toasted but be careful, coconut flour burns quickly.
Fill these tortillas with whatever you like
As regards the toppings or filling…
…you could top/fill these tortillas with whatever pleases you. When we made these “pancakes” we topped them with crispy flambéed chicken, lettuce leaves, thinly sliced radishes, avocado slices, home-made pico de gallo, finely grated cheese and sour cream. By the way, squeezing lime juice all over your tortillas will bring out a fresh, spicy and utterly delicious taste. Also, the coconut flavour is enhanced wonderfully.
As you can never go wrong with Mexican food, we’ll for sure eat these tortillas all year round. I can’t wait to try them with Black Tiger prawns or minced beef. All these options must be absolutely delicious. Have you got a favourite tortilla topping?

We’ve been making our own tortillas for years now because it was impossible to find gluten-free ones that did not taste like crap here in Austria (I guess you have far more options in the US). We usually make them with cornflour but since we have a little low carb/less sugar project going on, we decided to try paleo tortillas and they turned our really well!
