Pimientos De Padrón Like You’ve Never Had Them Before
When I was recently told by a doctor not to eat broccoli or cauliflower anymore, I was looking for other tasty veggie options. After some research I decided to give Pimientos de Padrón a try and, as the recipe was so delicious, I now want to share it with you.
You’re in for extra scrumptious Pimientos de Padrón like you’ve never had them before.
Pimientos de Padrón
Sprinkled with goat's cheese, pesto and roasted macadamia nuts
Ingredients
150g Pimientos de Padrón per person, washed
50g goat’s cheese per person
1 tbsp olive oil
3 tbsp pesto
a handful of macadamia nuts
sea salt to taste
How to make the best Pimientos de Padrón
- Heat olive oil in a pan over medium heat
- Add the green peppers and roast till they start to soften and their skin starts to blister
- In the meantime pre-heat your oven and grill a few slices of goat’s cheese until the cheese starts to bubble
- In another pan, roast macadamia nuts until golden brown
- Once everything is done, add the peppers to large bowl
- Spoon pesto on top and toss until the peppers are covered evenly
- Sprinkle goat’s cheese and macadamia nuts on top
- Finally, season with salt
This recipe is so easy to make and just waits to be recreated. I promise you won’t regret it! It’s an utterly tasty dish that can be eaten as is or could make for the perfect side dish.
