150g Pimientos de Padrón per person, washed

50g goat’s cheese per person

1 tbsp olive oil

3 tbsp pesto

sea salt to taste

How to make the best Pimientos de Padrón

  1. Heat olive oil in a pan over medium heat
  2. Add the green peppers and roast till they start to soften and their skin starts to blister
  3. In the meantime pre-heat your oven and grill a few slices of goat’s cheese until the cheese starts to bubble
  4. In another pan, roast macadamia nuts until golden brown
  5. Once everything is done, add the peppers to large bowl
  6. Spoon pesto on top and toss until the peppers are covered evenly
  7. Sprinkle goat’s cheese and macadamia nuts on top
  8. Finally, season with salt

This recipe is so easy to make and just waits to be recreated. I promise you won’t regret it! It’s an utterly tasty dish that can be eaten as is or could make for the perfect side dish.
