Gluten-free Granola with Maple Syrup

Is there a better way than starting your day with a healthy breakfast? Probably not… and that’s exactly why I made my own granola.

During the cold and brisk months of the year I prefer having either delicious low-carb porridge or a bowl of this crunchy muesli. You can easily whip up a batch of granola on Sunday evening and have breakfast sorted out for the rest of the week. The best part, you can adapt the recipe to your taste and it will still taste wonderful.

Granola Love

This vegan, sugar-free granola is delightfully crispy and crunchy. Paired with yoghurt and fresh fruit it's the perfect breakfast option.

 

Here’s what I used:

  • 100g whole almonds
  • 35g shredded coconut
  • 35g sunflower seeds
  • 35g pepitas
  • 35g flax meal
  • 30g pecans
  • 30g walnuts
  • 20g slivered almonds
  • 20g hazelnuts
  • 20g sesame seeds
  • 60ml coconut oil
  • 25ml maple syrup (use sugar-free syrup if you want to go low-carb)
  • cinnamon, vanilla powder and cardamom to taste
  • a pinch of sea salt

There’s just 5 easy steps and 60 minutes between you and a batch of this irresistible muesli:

  1. First of all, preheat the oven to 150°C and chop the nuts and seeds.
  2. Then, melt the coconut oil and add the maple syrup.
  3. Mix all the dry ingredients with the melted oil and spread the mixture onto a baking tray lined with baking paper.
  4. Finally, bake for about 60 minutes but stir every 15 minutes.
  5. Pair the granola with fresh fruit and yoghurt or almond milk and enjoy.

    Oh wow! Great minds think alike! I also love granola with youghut and fresh fruit, and what better than seasonal fruit. At the moment I am eating my granola with youghurt and…..fresh figs. Yep freshly picked figs from my lovely neighbours (who has graciously told me to pick as many as I want) fig tree in her garden. Thank you again for such a great recipe, I will be making this all year round. Thank you again E! ;)
