Salted Chocolate Honeycomb

Salted Chocolate Honeycomb

A few weeks ago I made honeycomb butter to go with these fluffy Ricotta Hotcakes. Making my own batch of honeycomb was so easy and delicious that this week I decided to make another batch. This time, however, I dipped medium-sized chunks of honeycomb in exquisite dark chocolate and sprinkled them with sea salt. The result was a sweet mid-afternoon snack: Salted Chocolate Honeycomb.

Enjoy!

 Salted Chocolate Honeycomb

Recipe Difficulty Level: Easy
Recipe Type: Snack
Servings: about 12

For the Honeycomb:

  • 50g caster sugar
  • 2.5 tsbp honey
  • 1 tsp baking soda
  • 30g dark chocolate
  • sea salt
  1. Line a baking tray with parchment paper.
  2. In a saucepan, heat the sugar and honey over medium heat while stirring continuously until the sugar has melted.
  3. Once the sugar has melted and the caramel reaches a golden amber colour, turn off the heat and quickly stir in the baking soda.
  4. Continue to stir until the baking soda has completely dissolved and starts foaming.
  5. Then pour the mixture onto the baking tray and set aside to cool. Once cooled, break the honeycomb into large chunks.
  6. Place a small bowl filled with chocolate over a pot of simmering water and stir until melted.
  7. Dip the honeycomb chunks into the melted chocolate and then place the dipped shards on parchment paper.
  8. Finally, sprinkle with sea salt and let the chocolate set.

It’s so easy and tastes amazing. Especially when added to butter. I could have honeycomb butter daily. Sooooooo good. <3
